Black olives and green olives 
Symbolism:
Symbol of longevity and hope, the olive tree is considered eternal. So described Hérodote "The olive tree was burned in the fire of the temple by the barbarians; but the day after the fire, when the Athenians, charged by the king to offer a sacrifice, rose to the sanctuary, they saw that a high shoot had sprung from the trunk". In all the Mediterranean area, we find olive trees millenniums, and were sometimes even considered pluri-millenniums.
Symbol of peace and reconciliation, the olive tree branch is chosen by God to mean to Noah that the Flood is finished and that the diminution begins, symbol of the forgiveness.
Symbol of victory, the olive tree is a present with a gratifying meaning during the Olympic Games in Athens. Crown with olive tree and jars of olive oil are so offered to the winners.
Varieties:
We count more than hundred varieties of olive trees, but in France we cultivate it hardly that about fifteen.
The choice of the variety depends on the final destination of the fruit, the olives of table or olive oil
The product:
Harvested with a quite particular care, olives intended for the table contrary to those intended for the oil are harvested one by one.
The name table olive implies a certain thickness of the fruit. Besides the calibre which confronts among olive in 100 grams there are a contents in sugar, in oil and the consistency of the pulp.
Nutrition:
An article appeared in "Provence" in September ( 03 ) asserts that the green olives are twice less fat than the black olives. Indeed, the green olives are picked before maturity and thus they are twice less calorie than the blacks. 118 kcal / 100 g for the green against 293 Kcal / 100 g for the blacks.
